Instant Pot and Slow Cooker Fajita Chicken

Instant Pot and Slow Cooker fajita chicken with peppers and onions is the perfect dump it, set it, and forget it recipe for the lazy days of summer or even busy working weeknights. It can be great on top of tacos, burrito bowls, or even salads. This dish has all that smoky flavor without turning on the stove.

In the ongoing battle of me versus my oven you read about in my last post, I have now employed the use of my trusty slow cooker and Instant Pot. I do this to save myself from heating up the entire house and also because as summer goes on and on, I get lazier and lazier when it come to dinners.

Anybody else?

Not only do I get lazier, I also allow more leeway when answering my kids’ requests. 

“Cookie for breakfast?” “I’ll allow it.”

“Can I just wear jammies all day?” “Yep! Saves me the laundry.”

“I’m all wet from the pool, can I pee in the dirt?” “….ok.”

Don’t judge me. I know all of you parents are in the same boat. Maybe you just won’t talk as freely about it. In regards to the peeing outside my own house thing: it saves them from slipping all across the kitchen when they are all wet and saves me all the puddle clean up.

I would rather spend my time reading or lounging on the deck outside than cooped up cooking inside in the summertime. That’s where the Instant Pot and Slow Cooker come into play.

Instant Pot and Slow Cooker fajita chicken and vegetables uses a super simple seasoning blend that gives you all the smoky flavor of fajitas without having to use the oven or stove. It’s a great topping for salads, tacos, and burrito bowls. 

I can reuse the chicken and vegetables over and over at least two-three times a week. This recipe is a dump it and forget it sorta recipe. Go live your life. Go to the park. Take the kids to the pool. Or, go to work and come home to a house that smells awesome and a meal that is all ready to go.

Instant Pot and Slow Cooker Fajita Chicken

Cook Time: 15 minutes

Instant Pot and Slow Cooker fajita chicken with peppers and onions is cooked in a blend of spicy and smoky seasonings so you get all that fajita flavor without turning on the oven or stove.

Ingredients

  • 1 yellow onion, thinly sliced
  • 3 bell peppers, thinly sliced
  • 3 boneless skinless chicken breasts
  • 1 tbsp chili powder
  • 1 tsp garlic powder
  • 1 1/2 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp ground cumin
  • 3/4 cup Mexican beer or water or chicken stock

Instructions

  1. Add the onions, peppers, and chicken to the Instant Pot or Slow Cooker. Pour the beer/stock/water over the chicken and vegetables. Add seasonings.
  2. Cover with lid. If slow cooking, set the slow cooker to 6 hours on high or 12 hours on low.
  3. Secure lid with the steam vent in the sealed position. Press Manual/Pressure Cook until the light is beneath High Pressure. Use the "-/+" buttons to adjust the time until the display reads 15 minutes. Quick release the pressure when the timer sounds.
  4. When the timer sounds, when the chicken is cooked through, shred the breasts using 2 forks. Serve chicken on tortillas, over rice, or a taco salad.
