Grilled Mango Sweet Potatoes

Sweet, caramelized mangoes and sweet potatoes cooked to tender, perfection in a foil packet on the grill. Grilled mango sweet potatoes take way less time and don’t stick to the grill thanks to the foil packet.

Here we are in August. Can you believe it? Mike and his teacher cronies call this month the Sunday of the summer. Boy, are they right. School starts up in a matter of weeks. Time to check those summer bucket lists and figure out what needs to get done.

I am thinking that maaaaybe, just maybe the boys will forget about wanting to go to a monster truck jam this summer. Fingers crossed.

This summer we did a lot of grilling and chilling in our own backyard. I loved sitting outside, reading a book, with the soothing screams of my wild boys as they dove in and out of the baby pool… I mean inflatable pool. Andy and Jack get very mad if you call it the baby pool.

We grilled lots of burgers, brats, and hot dogs this summer thanks to my #BurgerandBeerFriday series on Instagram. Mike is 100% fine with eating a burger and having a hot dog as a side. It may be easy to make happen, but definitely not the healthiest.

I prefer all the salads and sides to any grilled item in all honesty.

Gimme a good salad or coleslaw over a hot dog any day. Amiright?!?!

I like to keep things simple when Mike is manning the grill. Giving him some potatoes in a foil packet is the easiest way to accomplish that. I set a timer inside and tell him when they need to come off the grill. 

Grilled mango sweet potatoes is a new funky twist on those old grilled potatoes in foil. The sweet potatoes and mango caramelize and steam in the foil to make the tenderest and sweetest side dish ever.

Grilled Mango Sweet Potatoes

Prep Time: 5 minutes
Cook Time: 20 minutes
Resting Time: 5 minutes
Total Time: 30 minutes

Sweet and spicy mango and sweet potatoes grilled in a foil packet.

Ingredients

  • 2 medium sweet potatoes, peeled and sliced into 1/2" half-moon pieces
  • 1/2 mango, peeled and diced
  • 2 tbsp extra-virgin olive oil or avocado oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp chili powder
  • 1/2 tsp honey
  • foil

Instructions

  1. Preheat the grill to high for about 5 minutes, until the temperature is about 375- 400 degrees F.
  2. Toss the sweet potatoes, mango, olive oil, salt, pepper, chili powder, and honey together in a large mixing bowl.
  3. While the grill preheats, add the sweet potatoes and liquid to a large sheet of foil. Fold up all the edges to make the foil into a packet. Seal the edges tightly so no liquid escapes.
  4. Place the packet on the grill. Close the lid, Cook for 10 minutes. After 10 minutes, turn the packet over. Close the lid and cook for 10 more minutes.
  5. Remove the packet from the grill. Let it stand for 5 minutes. Open and serve.

Notes

These sweet potatoes are wonderful with a little bit of mango salsa on top.
