Grilled Rainbow Veggie Skewers

Grilled rainbow veggie skewers have all the colorful veggies and are grilled to perfection coated in a light lemon vinaigrette. They make the perfect side dish or entree.

The first week of summer is upon us. The weekend was full of sun and heat.

This week it is raining, naturally.

That doesn’t mean we won’t bust out the grilled goodness.

Grilled rainbow veggie skewers can be swapped and switched out based upon what produce is available.

I have to say it was hard to find a blue vegetable. The only one I could come up with was a baby blue potato.

If you have a blue veggie in mind please, tell me.

Red: Red Bell Peppers or Cherry/Grape Tomatoes

Orange: Orange Bell Pepper, Butternut Squash, or Carrots

Yellow: Squash, Corn, Potatoes, or Yellow Bell Peppers

Green: Asparagus or Zucchini

Blue: Blue Baby Potatoes

Purple: Eggplant, Red Onion, Beets, or Red Cabbage

All of the vegetables I came up with are only scratching the surface, honestly.

Feel free to swap out for whatever produce you have on hand.

Last summer I made grilled veggie skewers with a spicy zhoug sauce.

This year I wanted something more filling but with an easier and brighter marinade on top.

Lemon Dijon Marinade | Sarcastic Cooking

The marinade for the vegetables is made from honey, red wine vinegar, lemon juice, mustard, honey, garlic, parmesan cheese (optional), and olive oil.

It is so bright and adds a perfect zing to the veggies.

The Parmesan cheese and honey can be eliminated if you want to keep this meal vegan or vegetarian.

Pre-cook or par-boil the potatoes and corn for about 7 minutes or until fork tender.

My advice is to par-boil anything that is super hard like a potato, carrot, beet, or butternut squash.

That way all the vegetables cook for the same amount of time.

I always load up on the sides at a BBQ and if you’re loading up on sides too, it might as well be these healthy veggie skewers.

I love a good pasta salad or taco salad at a BBQ but these veggies are so filling and better for you.

Grilled rainbow veggie skewers are perfect as a side to a brat or hot dog or on their own over some leafy greens or cut up on some orzo with an extra drizzle of the marinade.

These skewers are going to be the star of your next BBQ.

Grilled Rainbow Veggie Skewers

Yield: Serves 5-7
Prep Time: 20 minutes
Cook Time: 10 minutes
Total Time: 30 minutes

A rainbow pf vegetables, some par-boiled ahead of time, coated in a lemon-Dijon marinade and grilled to charred perfection.

Ingredients

  • FOR THE MARINADE:
  • juice from 1/2 lemon
  • 1 tbsp red wine vinegar
  • 2 tsp honey
  • 1 tbsp freshly grated Parmesan cheese
  • 2 garlic cloves, grated
  • 1 tsp Dijon mustard
  • Large pinch of kosher salt
  • small pinch of either black pepper or crushed red pepper flakes
  • 1/2 cup extra-virgin olive oil
  • FOR THE SKEWERS:
  • 1-2 Ears of Corn, cut into 1 1/2 inch pieces
  • 5-7 baby blue potatoes, cut in half
  • 1 small zucchini, sliced into 1 inch rounds
  • 5-7 cherry tomatoes
  • 1/2 red bell pepper
  • 1/2 orange bell pepper
  • 3 asparagus, woody stem removed and cut into 2 inch pieces
  • 1/2 red onion, cut into 1 inch dice
  • 1 small eggplant, cut into 1 inch cubes
  • 5-7 metal skewers

Instructions

  1. Bring a large pot of water to a rolling boil. Add the corn and boil for 2 minutes, until bright yellow. Next, add the blue potatoes and boil for about 7 minutes until fork tender. Remove from water and set off to the side to cool.
  2. While the harder veggies are getting par-boiled, add all of the marinade ingredients EXCEPT the oil to a medium mixing bowl. Stream in the olive oil and whisk until combined. You will have extra marinade so save some off to the side for a final garnish.
  3. Preheat the grill to about 400-425 degrees F, with all burners on medium.
  4. Arrange the skewers in rainbow order, red, orange, yellow, green, blue, then the purples. Add assembled skewers to a large baking sheet covered in foil.
  5. Give the marinade another good whisk. Pour about 1/2 the marinade over the skewers. Turn them to evenly coat.
  6. Grill the skewers for about 5 minutes on each side, with the grill cover closed.I like to use tongs and a spatula to carefully turn the skewers so all the sides get a little char.
  7. Whisk the marinade and add a little drizzle over the finished skewers and then serve.
