Buffalo Cauliflower Dip

Buffalo cauliflower dip is creamy, bubbly, and spicy. Cauliflower cooked tender and then mixed with cream cheese, buffalo sauce, sour cream, and three cheeses. Bake until golden and serve with chips and veggies for dipping.

Mike is going to be mad about this recipe.

I have defiled his most cherished and favorite dip.

That is his take on it anyway.

Every Super Bowl, I make the classic buffalo chicken dip.

If I am not making it, my brother does, and then I make my beer brined grilled wings.

Football is not the same without some sort of buffalo sauced item.

Let’s not forget that cauliflower is still having a moment of chameleon-like trendiness.

Cauliflower crust pizza. Cauliflower crisps.

 Cauliflower tortillas.

Cauliflower steaks. Cauliflower buffalo wings?

Mike for sure does not want a giant hunk of cauliflower.

Neither do I to be honest.

It doesn’t make for an easy to eat dip.

That is why I diced the cauliflower into tiny, bite-sized pieces.

The cauliflower is cooked until caramelized in the pan first.

Seasoned with salt, pepper, onion powder, and garlic powder.

Once the cauliflower gets some color on it, remove it from the heat.

Mix in some butter and buffalo sauce, cream cheese, and sour cream.

Mix in a few green onions for some more color and bite.

Mix in half of the blue cheese, cheddar cheese, and mozzarella cheese.

Top with the leftover cheese and onions.

Bake the dip until bubbly and golden.

I love this dip with crispy, salty tortilla chips or celery sticks and carrot sticks.

I have big plans for using the leftover dip to make paninis!

However, that might not happen because I cannot stop eating this dip!

Don’t forget to top the dip with more green onions and a drizzle of buffalo sauce when it is cooked.

Baked Buffalo Cauliflower Dip | Sarcastic Cooking

Buffalo Cauliflower Dip

Tender cooked and seasoned cauliflower baked until golden in a mix of cream cheese, sour cream, buffalo sauce, and three cheeses.

Ingredients

  • 1 medium head of cauliflower, cut into 1/4-1/2 inch bite-sized pieces (about 4 cups)
  • 2 tbsp extra-virgin olive oil
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 2 tbsp unsalted butter
  • 1/2 cup Buffalo wing sauce
  • 1/4 cup sour cream
  • 4oz cream cheese, softened and cut into small cubes
  • 2 green onions, chopped
  • 1/4 cup crumbled blue cheese
  • 1/2 cup grated mild cheddar cheese
  • 1 cup grated mozzarella cheese

Instructions

  1. Preheat the oven to 375 degrees F.
  2. Add the olive oil to a 9" cast iron skillet over medium heat. Add the cauliflower. Stir to coat. Season with salt, pepper, garlic powder, and onion powder. Mix to combine. Continue stirring occasionally and cook for about 10 minutes until golden and tender.
  3. Reduce the heat to low. Mix in the butter. Once melted, add the buffalo sauce. Mix to combine. Add sour cream and cream cheese. Mix until melted and combined.
  4. Remove from heat. Add half of each cheese and half the green onions. Mix to combine. The cheese doesn't need to fully melt.
  5. Top with the remaining cheeses. Transfer the cast iron dish to the oven. Bake for about 15-20 minutes until melted and bubbly throughout the center.
  6. Remove from oven. Top with remaining green onion and a drizzle of buffalo sauce.
  7. Serve with carrot sticks, celery sticks, and tortilla chips for dipping.

Notes

NOTE: The dip can be prepped the day before. Reserve the remaining half of all the grated cheeses and green onions. Top the chilled dip with the cheeses the next day and then bake until golden when ready to serve.
