Mini Kale & Mushroom Pot Pies

Let’s talk about one of my real life phobias, which as of now, I think I have officially overcome: baking. I really think I have developed a small baking skill set that can carry me through most recipes. I am most likely going to have to change my “about me” page.
I have never made a pie crust, per se. I have made empanadas. When thinking about what pie crust recipe to use for this gem of a recipe, a light bulb went on. Duh! Empanadas have a flaky crust just like a pie!
So, even though I have yet to make a pie for myself or for the blog, I have made pie crust.
Kale. Let’s discuss.
It is all the rage these days. I made kale chips, and I have to say…. Not a huge fan. If you love them, cool. I am not arguing if they are good or bad. Just sayin’ for me, right here, not a fan. Definitely an acquired taste.
I do like kale in salads or as a side dish with some garlic. It is similar to broccoli. If you have yet to try it, now is the time! Seriously, you are like a year behind in food trends.
Pot pies are so fall-y. I like them but normally they are so filling. All that crust and gooey insides will do ya in. So, make them mini. After one you will be full.
Crazy thought: When I was baking these in a large muffin tin, I thought, “How cute would it be if you dolloped a lump of mashed potatoes on top?”
Too much? Maybe. (But, let me know if you try it).

Mini Kale & Mushroom Pot Pies

Ingredients

  • For the Crust:
  • 2 Cups All-Purpose Flour
  • ½ Teaspoon Salt
  • 2/3 Cup Unsalted Butter cold
  • ½ Cup Cold Water
  • For the Filling:
  • 1/3 Cup Butter
  • 1 Clove Garlic minced
  • 1/3 Cup All-Purpose Flour
  • 6 Cremini Mushrooms thinly sliced
  • ½ Teaspoon Salt
  • ¼ Teaspoon Pepper
  • 1 Teaspoon Dried Oregano
  • 1 ½ Cup Low-Sodium Vegetable Stock
  • 1 Cup Whole Milk
  • 3 Cups Kale stems removed and chopped

Instructions

  1. To make the crust, whisk together the flour and salt in a large mixing bowl. Use a pastry cutter to incorporate the cold butter into the flour. When the butter is about the size of small peas, add the cold water, and use a rubber spatula to work together.
  2. When the dough starts to hold together, turn out on to a piece of plastic wrap, wrap tightly, and refrigerate while you make the filling.
  3. Melt the butter in a large skillet over medium heat. Add the garlic and cook for a minute.
  4. Add the flour and whisk together with the butter to make a roux. Cook for a minute.
  5. Add the mushrooms to the skillet and cook for three minutes.
  6. Pour the stock into the pan and mix well to loosen up the roux. Make sure there are no lumps of flour remaining. Then add in the milk and bring to a simmer over medium/high heat. Simmer for five minutes.
  7. Preheat the oven to 350 degrees F.
  8. Turn off the heat and add the kale. Cover with a lid and let sit while you roll out the dough.
  9. Remove the crust from the refrigerator. Lightly flour a work surface and place the dough in the center. Roll the dough until it is ¼ inch thick.
  10. Cut 4, 5 ½ inch wide circles and 4, 3 ½ inch circles. Grease a large, 6 cavity muffin tin. Lay the larger circles into the cavity of the muffin tin. Form to the tin and pull a little edge up around the top of the tin, this will help you make a cute crimped edge. Fill the dough with a ladle and a half of the filling. Place the smaller circle of dough on top. Crimp the edges together and cut a cross into the center of the top of the dough for an air vent. Continue with each pie.
  11. Bake the pies for thirty minutes. Let cool in the tin for five minutes then transfer to a wire rack to finish cooling completely. If you are serving right away, let cool at least fifteen minutes before serving.

    I’m kind of with you on the kale chips. I’ll eat them, but I definitely don’t go out of my way for them. I’d much rather have them in these cute pies!

    Great recipe and a wonderful way to use up lots of kale ( which I happen to have a lot of!) despite your fear of baking,these turned out beautifully!
