French Onion Ramen

French onion ramen is a comforting take on the classic French onion soup. Broth filled with caramelized onions and all the umami flavor makes French onion ramen a perfect fall entree.

Oh, French onion soup, you are soooo good my friend. French onion soup always makes me think of my Dad. He loves anything you can slurp loudly and consume while mortifying your daughter. I think that’s just part of being a dad, right?

French onion soup also reminds me of our first wedding anniversary celebration. Mike and I spent the weekend at the Grand Geneva Resort in Lake Geneva, Wisconsin. We ate a celebratory, fancy dinner at the Geneva Chophouse inside the hotel.

Mike and I decided to go all out, which should mean something because everything on the menu is a la carte.

Normally, given the choice between soup and salad, I go for salad. That day I was just feeling the clam chowder for some reason. Now, Mike on the other hand, given the choice between soup and salad, would ultimately choose death. Jokes!

He opted for soup. Despite my strong recommendation to get the clam chowder too, he went down his own path and got the French onion soup. I was a little confused but figured, maybe he had it before and liked it. A man that hates vegetables, ordering an entire soup composed of onions? Makes sense, I guess.

The soup came and Mike was staring at his cheese coated bowl, turning it around and around, with a look of confusion. I KNEW he never had this soup before.

First off, he couldn’t figure out how to use the side of his spoon to cut through the bread and cheese on top. Then the soup was so hot, yet he refused to let it cool. He was in pain and he spooned giant strands of onion into his mouth. I tried not to laugh.

I did feel bad for him because the onions were soooo long. They must have been sliced off giant onions. Finally he admitted, he never had the soup before and that I was right. He should have ordered the clam chowder.

Now that the weather has started to turn cooler, I am all in on comfort foods like French onion soup. Mike might still be traumatized from his last experience, so adding in long slurpy ramen might not be up his alley.

French Onion Ramen

Cozy French onion soup flavors with big slurpy ramen noodles.

Ingredients

  • 4 tbsp unsalted butter
  • 3 cups thinly sliced yellow onions
  • 1 tsp salt
  • 1 tsp ground pepper
  • 3 tsp sugar
  • 1 1/2 tbsp Worcestershire sauce
  • 3 tsp fresh chopped thyme
  • 6 cups low-sodium beef broth
  • 1/2 lb ramen noodles
  • 1 cup grated fontina cheese or parmesan cheese

Instructions

  1. Preheat a large Dutch oven over medium heat. Add butter to the Dutch oven.
  2. Once the butter melts, add the onions.sweat the onions for about 5 minutes. Add salt, pepper, sugar, Worcestershire, and thyme. Mix to combine. Cook for 1-2 minutes.
  3. Pour 1 cup beef broth into the onion mixture. Cover with lid, reduce heat to medium/low, and cook for 20 minutes.
  4. Meanwhile bring the remaining broth to a boil in a medium pot. add ramen and cook according to the package instructions.
  5. Once the noodles and onions have finished cooking, add the noodles and broth to the onion pot. Mix to combine. add more slat, pepper, or thyme to taste.
  6. Divide soup into 2 large bowls or 4 smaller bowls. Serve with a sprinkle of cheese on top or a toasted piece of bread and cheese on tops.
