One Pot Crispy Salami and Cherry Tomato Pasta

Who doesn’t love a good one pot pasta? Crispy salami tossed with burst cherry tomatoes, fresh basil, garlic, and shallot. So many flavors and just the right amount of spice in one pot crispy salami and cherry tomato pasta.

Holy geez. I am still reeling from this weekend. I spend a lot of time in my head normally. When I have to prepare for a speaking engagement such as a book signing, it takes a long time for me to come back to earth, so to speak.

Any other introverts out there the same way?

I spent Sunday morning on the couch with my silent life partner, Weezer the pug. I unhooked my eyeballs from internet and social media. I am sure some people would have said you should ride that publicity high and keep your presence relevant. But I needed to check out of book life to get back to home life.

Laundry stops for no mom.

Plus if I stepped on another Lego, I swear to God I was going to run away from home. 


On the day my book came out, my good blog friend Christina from Dessert for Two also released her mega-opus-all-inculsive-amazing cookbook, Dinner Just for Two. Thank God she did! I needed new inspiration to jump back into the weekly cooking routine.

This book has everything. Chapters filled with pastas, soups, bowls, oven baked goodies and casseroles, and of course desserts. My favorite chapter has to be the cook once, eat twice chapter. As a hater of leftovers, I am always looking for ways to reinvent last nights meal.

Upon first scan of the book, one pot crispy salami and cherry tomato pasta caught my eye.

I am the tomato lover for now and always. Mike and Andy are the salami and pasta lovers. Jack is a gently-push-all-new-foods-that-are-not-chicken-off-his-plate kind of fellow. Three out of four family members fed off one meal is a win in my book.

This pasta was so easy and delicious I already bought the ingredients to make it again. This may be the new weekly pasta Monday dish guys!

One Pot Crispy Salami and Cherry Tomato Pasta

Yield: serves 2-3
Prep Time: 5 minutes
Cook Time: 20 minutes
Total Time: 25 minutes

Crispy salami tossed together with spaghetti, burst tomatoes, shallot, garlic, basil, and crushed red pepper flakes. The prefect salty and spicy meal.

Ingredients

  • 4oz thinly sliced salami
  • 8oz cherry or grape tomatoes
  • 1 shallot, thinly sliced
  • 2 garlic cloves, thinly sliced
  • 6oz spaghetti
  • 1/2 tsp crushed red pepper flakes
  • 1 tsp salt
  • 1/4 tsp freshly ground black pepper
  • 1 tbsp olive oil
  • 3 sprigs fresh basil, plus extra for serving
  • 1/4 cup white wine
  • 2 cups water
  • freshly grated parmesan cheese, for topping

Instructions

  1. Heat a medium-sized, three quart deep sided skillet over medium/high heat. While the pan heats, slice the salami into 1-inch wide strips.
  2. Add the salami to the hot pan. Cook for 5-7 minutes, turning and stirring regularly, until each side is crisped. Once the salami is crispy, remove using a slotted spoon, and transfer to a paper towel lined plate.
  3. Add all the remaining ingredients, stirring to deglaze the pan and evenly distribute all the flavors. With the heat over medium/high, bring the liquid to a simmer.
  4. Stir occasionally and let the pasta cook for about 9-12 minutes until al dente.
  5. Add the salami back to the pan and mix to combine.
  6. Transfer to serving bowls, top with extra basil and some parmesan cheese.
