House Salad with Rotisserie Chicken

This easy house salad with rotisserie chicken has a simple and flavorful vinaigrette along with a slew of good for you veggies. This salad contains, green beans, avocado, pear, tomatoes, cucumbers, baby greens, and of course rotisserie chicken. It is easy to throw together and anything but a boring house salad.

The atmosphere out here in the world is a bit ominous to say the least. If you weren’t out buying 100 rolls of toilet paper, were you even doomsday prepping? Jokes.

But for real, do not overbuy!

I am sure that a lot of people may have hit the store at the right time and were able to snag maybe a rotisserie chicken. Hopefully.

This salad has a lot of good for you greens and veggies that work so well mixed with the umami-packed balsamic vinaigrette.

You can always add in either the idiot-proof chicken from Serena or my easy Instant Pot shredded chicken from the first cookbook.

Let’s talk about this house salad now that the chicken is out of the way.

House salad with rotisserie chicken has green beans, avocado, cucumber, tomatoes, red onion, pears, and baby greens. It all comes together with a balsamic vinaigrette that features a little soy sauce and tahini to round it out.

I washed the greens, steamed the green beans, and did all my chopping ahead of time. Mix the vinaigrette ahead of time as well.

That way when I wanted to eat the salad, all I had to do was mix it all together.

Store the vinaigrette in the fridge and let it come to room temperature before mixing it and adding it to the salad.

This is the perfect small lunch salad or big dinner salad.

The greens and veggies will help to keep you sane and healthy during this time. Keeping your sanity while stuck as home is a whole other thing I can’t even get into because I am struggling and it has only been one day.

House Salad with Rotisserie Chicken

Yield: Makes 4 small salads or 2 big salads
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes

Baby greens, green beans, avocado, red onion, cucumber, tomatoes, and pear tossed with a Asian-inspired balsamic vinaigrette.

Ingredients

  • FOR THE SALAD:
  • 10oz baby greens mix (or any kind of lettuces you have on hand)
  • 1 cup trimmed fresh green beans
  • 1 avocado, diced
  • 1/3 cup diced red onion
  • 1/3 cup diced cucumber
  • 2 cups halved cherry or grape tomatoes
  • 2 cups chopped rotisserie chicken breasts
  • 1 red pear, diced
  • FOR THE VINAIGRETTE:
  • 1/4 cup low sodium soy sauce
  • 1/4 cup balsamic vinegar
  • 2 tbsp dijon mustard
  • 2 tsp tahini
  • 1 tbsp honey
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup extra virgin olive oil

Instructions

  1. Bring a small pot of water to a boil. Once boiling, add the green beans. Boil/blanche for 4-5 minutes. Drain the beans and run cold water over them or transfer them to an ice bath to stop the cooking process.
  2. While the beans are cooking, add all the vinaigrette ingredients to a medium mixing bowl. Whisk to combine. Add more salt/pepper to taste.
  3. Assemble the salad. Top with a few tablespoonfuls fo the vinaigrette and then serve.

Notes

This will make extra salad dressing. Just store it in the fridge, sealed, for up to a week.
