As you know, we had a crazy week here. (Refer to yesterday’s post for more deets on that). However, I was happy that I still managed to make dinner every night. Here is what our last week of dinners looked like. Oh! This week I am also including two of my fave quick weekend lunches and the cookie of my dreams, which is calling to me from my kitchen counter.
Monday – Chicken Parmesan Sandwiches (I basically used this fried chicken recipe, put some sauce and cheese on top, plopped it under the broiler, and then in between two slices of toasted garlic bread. Boom! I will have the more complete recipe to this sandwich on the blog tomorrow actually).
Tuesday – Red Enchilada Stacks with Spicy Mushrooms (If you want meat, feel free to add in some shredded chicken or chorizo).
Wednesday – Cauliflower Mac and Cheese (FYI I totally thought I would fool Andy by replacing the regular cheese sauce with this cauliflower cream sauce. It definitely did not fool him. #momfail)
Thursday – Sausage and Kale French Bread Pizza (I subbed turkey sausage and it was still amazing).
Friday – Mushroom Gravy on Homemade Buttermilk Biscuits
This week’s go to dessert – Copycat Levain Bakery Chocolate Chip Cookies
