Oatmeal Cookies with White Chocolate and Golden Raisins

Oatmeal cookies with white chocolate and golden raisins are a sweet twist on the traditional oatmeal raisin cookie.

Are you guys annoyed by some people on Instagram or other various forms of social media throwing their “I’m still working out  since New Years” and “Whole30 plus 40 days” lives in your face? It might be just me.

For some people, I think “Ok, good for you.” Others got me swiping to the left real quick to skip their latest CrossFit workout—because that’s what I want to watch while eating my take out fast food lunch.

I seriously started the year eating healthy. Then I got sick with the flu a few times and couldn’t eat anything.

Best diet ever.

I was doing ok up until about a week out from Valentine’s Day when all of a sudden the spirit of the holiday and all the chocolate and pink and red and sprinkled things got me! And are still getting me. Being a blogger and having to follow other food bloggers who are better at dessert making than you is a challenging part of this job.

I think it might be time to reevaluate my social media following if the healthy people are killing me and the not healthy people are killing me too.

Hard to please much?

I relate to the real people with achievable feeds filled with a good mix of everything.

This struggle between not being too healthy or too gluttonous led me to revamp my cookie life choices. Did you think I was going to say “Make a salad?” or “Eat a green smoothie?” Ha!

It was time to stop giving in to my kids and their chocolate chip demands. I had to delve into my cookbook collection and see where my tastebuds would lead me. Oatmeal cookies. Yessss!

Also, I wanted to see if I could trick them into eating oats and fruit in a cookie. Spoiler alert: I only got one out of the two to eat and enjoy the cookies.

These oatmeal cookies with white chocolate and golden raisins from Sarah Kieffer’s book are the perfect amount of soft and chewy, buttery but not too much so, and just the right amount of sweet from the golden raisins (which, by the way, I have not used in a lot of things before and I think it is safe to say I like them more than regular raisins).

The cookies are the perfect balance between sweet and healthy-ish. They remind me of Whole Food’s jumble nut cookies. Just the kind of harmony I was looking for to calm me down during a deep social media dive.

Oatmeal Cookies with White Chocolate and Golden Raisins

Chewy and slightly crisp oatmeal cookies studded with white chocolate and golden raisins.

Servings 14 -16 Cookies

Ingredients

  • 1 Cup All Purpose Flour
  • 3/4 Teaspoon Baking Soda
  • 1/2 Teaspoon Salt
  • 1/4 Teaspoon Ground Cinnamon
  • 12 Tablespoons Unsalted Butter room temperature
  • 1/3 Cup Granulated Sugar
  • 3/4 Cup Packed Brown Sugar
  • 1 Large Egg
  • 2 Teaspoons Pure Vanilla Extract
  • 2 1/4 Cups Rolled Oats
  • 5 Ounces White Chocolate chopped
  • 3/4 Cup Golden Raisins

Instructions

  1. Preheat the oven to 350 degrees F. Line two large baking sheets with parchment paper.
  2. In a medium mixing bowl whisk together the flour, oats, baking soda, salt, and cinnamon.
  3. In the bowl of a stand mixer fitted with the paddle attachment, beat the butter on medium speed until light and fluffy. Add the sugars and beat another 2-3 minutes until fully incorporated.
  4. Scrape down the sides, add the egg, and vanilla. Mix on medium until combined.
  5. Add the dry ingredients and mix on low until just about combined. Add the raisins and chocolate. Mix to combine on low.
  6. Using about a 1/4 cup scoop, portions out balls of dough, about 6 per baking sheet.
  7. Bake cookies for 10-12 minutes until sides are ever so slightly golden and the middles still look soft. Let the cookies cool on a baking sheet for 5 minutes and then transfer to a wire rack to cool completely.
