Crab and Corn Queso Dip

Crab and corn queso dip is a rich and tasty dip for every summer party. Canned real crab meat paired with charred corn and lots of cheese will appeal to any crowd. You can whip together some crab and corn queso dip in no time!

Corn and Crab Queso Dip - Sarcastic Cooking

This happens to me every year around this time. I do my blogger duty and remember to post a Mexican recipe like these margaritas right before Cinco de Mayo. Some years, like when Jack and Andy were teensy babies, I couldn’t even remember to do that much.

Bad food blogger.

Cinco de Mayo comes and goes and now the weather starts to heat up in Illinois and all I want is beers with limes in them and all the Mexican food. Anybody else feel the same way?

I know some of you that follow me on Instagram are probably thinking, “Stef, you make so much Mexican food all the time anyway, who are you kidding?”

But for real, I feel like I should know about this trend and plan accordingly for the future. So that by the time I get my Mexcian food loving butt in gear, you aren’t sick of all the queso dips, bean dips, and taco recipes.

Hopefully you aren’t sick of them after last week.

I guess this is basically just my way of prepping you for a month filled with more Mexican food recipes. Cool?

Let’s talk crab then.

I wanted to get good quality crab, not imitation. I know, who am I? High roller. Or as Mike calls me, Miss Champagne taste with a Miller High Life income. Well, my local grocery store didn’t have any fresh crab. I headed to the canned section.

I was able to find some real canned crab. Yay! And it didn’t break the bank. I think like $5 for a can. That wasn’t as bad as i thought it was going to be.

I paired the crab with the corn and then buried it in a flood of queso dip.

Crab and corn queso is what you would have taken to your Cinco de Mayo party, if I could have gotten my act together. But since corn is in season, we have good quality canned real crab meat, and queso never goes out of style, we can enjoy it all summer long!

Crab and Corn Queso Dip

Creamy and slightly spicy queso dip topped with charred corn and real crab meat.

Ingredients

  • 1/4 cup unsalted butter
  • 1/4 cup all purpose flour
  • 6 oz Canned All White Crab Meat drained
  • 1 garlic clove grated
  • 1/4 tsp ground cumin
  • 1 1/4 cup Whole Milk
  • 1 ear of corn
  • 10 oz Shredded Cheddar Cheese
  • 6 oz Shredded Mozzarella Cheese
  • salt
  • black pepper
  • tortilla chips
  • fresh cilantro leaves

Instructions

  1. Turn your broiler on high and place the corn under that for a few minutes or char an ear of corn over the stovetop flame. Use a knife to slice down the side of the ear of corn to remove the corn from the cob. Set off to the side.

  2. In a small stock pot, melt the butter over medium/low flame. Add the crab meat, garlic and the cumin. Once the butter melts, add the flour. Whisk to combine.

  3. Slowly pour in the milk. Reduce the heat to low. Add the cheeses. Keep whisking until the cheese melts.

  4. Stir in most of the corn except a few pieces for garnish. Season to taste with the salt and black pepper.

  5. Serve with chips and some fresh cilantro leaves for garnish.
