Ham, Egg, and Kimchi Fried Rice

Ham, egg, and kimchi fried rice is your new weeknight go-to meal. Crispy ham, rice, and kimchi tossed together in a few scrambled eggs. Top the fried rice with some green onions, sesame seeds, and hot sauce and get dinner in no time at all!

Now, on to the fried rice!

Back when I shared this recipe for kimchi fried rice, I was making fried rice once a week. It is super easy. Mike and I devour it. Plus it uses up any leftover meat and veggies you may have on hand.

I never really add in eggs. You guys know, I reserve my eggs for breakfast. This time, I needed a little extra something, so in went the eggs! The one thing I always add in now and forever will be kimchi. It adds veggies and a whole new combination of flavors. Pick up a jar of kimchi. Add it to your fried rice to switch things up a little.

You will not be disappointed.

The eggs and the crispy ham are great together. Toss in spicy and pickle-y kimchi and it is next level.

Ham, Egg, and Kimchi Fried Rice

Crispy ham tossed together with rice, kimchi, peas, green onions, and a little bit of scrambled eggs.

Ingredients

  • 1 tbsp olive oil
  • 1 cup diced thick cut ham
  • 1/2 yellow onion diced
  • 1/2 cup kimchi chopped
  • 1 tsp Sriracha
  • 1 tbsp low sodium soy sauce
  • 2 cups cooked brown rice
  • 2 tbsp frozen peas
  • 2 eggs beaten
  • salt to taste
  • pepper to taste
  • 1 green onion chopped

Instructions

  1. Add olive oil to a medium skillet over medium heat. 

  2. Add the ham and cook until almost crispy. Add the yellow onion and cook another 3 minutes.

  3. Add the kimchi to the pan. Mix to combine. Reduce the heat to medium/low.

  4. Mix in the sriracha and soy sauce. Add a little salt and black pepper. Mix in the rice.

  5. Reduce heat to low. Add the peas and beaten eggs. Season with more salt and pepper. Keep stirring until the eggs are cooked through and coat everything, about 4 minutes.

  6. remove from heat. Garnish with sesame seeds, green onion, and more sriracha and soy sauce if needed.
