Remember how I was out of town for a few weekends here and there in July? Well, my little travel bug bit my parents too apparently. They were gone enjoying the good life out in Arizona for 10 days. They deserve it!

While they were away, my youngest brother and I split the duties of checking on the garden that my dad claims to have meticulously planned out and planted.

Keyword: claims.

I visited the garden three times while they were gone. Every single time, I looked longingly at all 8-10 giant tomato plants with tons of green little cherry, grape, heirloom and roma tomatoes hoping I would catch one little sliver of red so I could snatch that baby for myself. Alas… not so.

What I did get while searching a green bean vine for signs of beans was a Japanese beetle attack. Those bugs are the worst! I shudder thinking back on that. Yuck.

I had another lovely encounter with 18 cucumber plants. 18! EIGHTEEN! I don’t know if my dad had plans to start a pickle business and just forgot to tell us.

Not only did I have 15-20 cucumbers every time I went to visit, I also had to redirect those itchy, sticky vines away from the other plants. They are taking over!

If my dad goes missing, look for him amongst the cucumber vines because they probably went full on Audrey II and ate him.

Seriously.

My parents have been back for 4 days now and every day I have asked if there were any ripe tomatoes. Nope. No tomatoes yet. Now, either he is holding out on me because of all my good garden jokes he read above, or this is some cruel joke.

In the meantime, I will be waiting out the tomato surplus from my parents’ garden and continuing to purchase overpriced heirloom tomatoes from the store so I can make these heirloom tomato and lemon-horseradish mayo sandwiches for the remainder of the summer.

Heirloom Tomato and Lemon Horseradish Mayo Sandwiches

Yield: 2-4 sandwiches
Prep Time: 10 minutes
Total Time: 10 minutes

Open faced summer heirloom tomato and lemon horseradish mayo sandwiches.

Ingredients

  • 1 yellow heirloom tomato, thinly sliced
  • 1 red heirloom tomato, thinly sliced
  • 4-6 slices of rye bread or marble rye, toasted
  • 1/3 cup mayonnaise
  • 1/2 tsp lemon zest
  • 1/4-1/2 tsp prepared grated horseradish
  • maldon sea salt, for topping
  • freshly cracked black pepper, for topping

Instructions

  1. Combine the mayo, lemon zest, and horseradish in a small bowl.
  2. Spread a good tablespoon or two on to each slice of toasted bread.
  3. Top each slice with 2-3 tomato slices. Sprinkle with salt and pepper.
  4. Eat!

Notes

 (if you like horseradish as much as I do, go for 1 full teaspoon, but taste it first before adding more)
