It’s the most wonderful time of the year… ACHOO! fall is a beautiful season full of transitions. It is when Mother Nature really tests our flexibility as humans. One day we have a perfect 70 degrees. The next day it’s 40 degrees and raining. Then wham, a whopping 80 degrees. Some people are even getting, dare I even say it, SNOW!

During this time of year the runny noses and boogers are a plentiful in our house. Sorry, I know, food blog. You don’t want to read about mucus.

I need to know something mucus related though. And I promise to stop saying mucus.

My kids both normally go on long streaks of being 100% healthy. During that time, we normally see zero other people. Then the second we make plans with friends or family we haven’t seen in a while, boom! They get raging coughs or colds.

Then the people we haven’t seen in a while say things like, “your kids are aaaaalways sick.” Which, I know isn’t true, so I try not to let it hurt my feelings. It’s just any time we make plans they get a cold or something.

Does this happen to anybody else?

My kids cannot be the only ones with socially induced coughs and colds.

On top of this, you know that once I tell Mike the kids have colds, he will say something like, “oh yeah I had that all week.” Cue a mega eye roll.

I am doing my best with antibacterial wipes for the kids hands after school stocked in the car (thanks to a tip from Dianna) and washing my hands all the time between booger wipes, to not get a cold. I have also started taking elderberry supplements.

Dairy- Free Pesto

Yield: 1/2 - 3/4 cup pesto
Prep Time: 5 minutes
Total Time: 5 minutes

Dairy free pesto made with a mix of fresh arugula, spinach, and basil.

Ingredients

  • 1 cup fresh basil leaves
  • 1/2 cup fresh baby arugula
  • 1 cup fresh baby spinach
  • 1 garlic clove, smashed and roughly chopped
  • 1 tsp pine nuts
  • 1 tbsp minced red onion
  • salt
  • pepper
  • 1/2 cup olive oil

Instructions

  1. Add basil, arugula, spinach, pine nuts, garlic, red onion, a pinch of salt and pepper to a food processor. Pulse until minced.
  2. Stream in the olive oil and puree until a smooth pesto forms. Add more salt and pepper to taste.

Instant Pot Pesto Chicken Noodle Soup

Super easy Instant Pot chicken noodle soup with onion, celery, carrot, and chicken breasts flavored with a dairy-free garlic pesto.

Ingredients

  • 1 yellow onion, diced
  • 3 celery stalks, chopped
  • 3 carrots, peeled and sliced
  • 2 large boneless skinless chicken breasts
  • 1 tbsp salt
  • 40 oz water
  • 2 cups egg noodles
  • 3 tbsp dairy-free pesto
  • black pepper

Instructions

  1. Add the onion, celery, carrots, chicken, water, and salt to the Instant Pot. Secure the lid with the vent in the sealed position.
  2. Press "Pressure Cook" until the light is beneath "High Pressure." Adjust the time using the "+/-" buttons until the display reads 20 minutes.
  3. While the soup cooks, prepare the dairy-free pesto according to the above recipe.
  4. Once the timer sounds, quick release the steam and remove the lid. Remove the chicken breasts and transfer them to a plate. Use two forks to shred the chicken.
  5. Add the noodles to the Instant Pot. Stir to combine.
  6. Press "saute" until the light is beneath "more" and cook the noodles until tender, about 10-12 minutes.
  7. Right before serving, stir in the pesto. Add salt and pepper to taste if needed.
