I am still holding a few of the concepts near and dear to my person because hopefully one day I can run with them. In what direction, I haven’t the faintest right now. You never know, right?

My favorite concept was a book filled with things that moms would make for themselves if their kids/families/husbands weren’t around. One day I’ll get a taker for this one. I promise! You could say I drew my inspiration from that episode of Sex and the City with the secret singles behaviors. Carrie says that she likes to make a stack of crackers and grape jelly and eat them while standing in her kitchen reading Vogue.

I couldn’t help but wonder, when I think back on all the mac and cheese, hot dogs, and cold french fries I have eaten in my life, was it all worth it?

See! The intro to the book writes itself just as if it flew off Carrie Bradshaw’s old sad Mac laptop. (Yes. I watched that show way, way too many times).

I love me all kinds of avocado toasts. You can tell from this one with elote, this one with Brussels sprouts, and this one with scrambled eggs. Kudos to you all if you make it through my daily egg and avocado toast Instagram posts too!

Naturally, if left alone, I wouldn’t just scarf down one avocado toast on the run. I would eat like 10 mini ones on good French bread. I would make them fancy and girly. It would be so nice to sit and enjoy them in complete silence without having somebody call my food “Blech” or “Gross.”

That’s it. I don’t even need a copy of Vogue. Just give me all the citrus honey whipped ricotta avocado toast.

Citrus Honey Whipped Ricotta Avocado Toast

Yield: 20 small toasts
Prep Time: 7 minutes
Cook Time: 3 minutes
Total Time: 10 minutes

Citrus honey whipped ricotta on toasted bread topped with avocado slices.

Ingredients

  • 12oz Whole Milk Ricotta
  • pinch of sea salt
  • 1 tsp lemon juice
  • 1 tsp orange juice
  • 1/2 tsp lemon zest
  • 1/2 tsp orange zest
  • 1 tsp honey
  • 2 avocados, pitted, skin removed, and thinly sliced
  • 1 demi french baguette, thinly sliced

Instructions

  1. Preheat the broiler of your oven to low. Add sliced bread to a large sheet pan. toast on each side for about 1-2 minutes until lightly golden.
  2. Add ricotta, salt, lemon juice, lemon zest, orange juice, orange zest, and honey to a food processor. Puree until smooth, whipped, and fluffy.
  3. Top each slice of toast with 1-2 tbsp whipped ricotta, 3-5 avocado slices, and a drizzle of honey. Season with flaky sea salt and a little black pepper.
