Grilled Beer Brats

Grilled beer brats dish could not be simpler. Get yourself some brats, two beers, and an onion. Place them all in a foil pan on the grill and let them cook away. The end result is beer brats with perfectly caramelized onions. Char on the grill and then serve.

The one thing I hate about summertime grilling is being trapped indoors on side or condiment duty when everybody else is gathered around the grill drinking and laughing and waiting for food to cook.

That’s the main reason my mom always hated days we would grill for dinner. My Dad was outside with a beer in his hand grilling away. We kids would crowd around him asking to help turn the burgers or flip the salmon. Those salmon cooking contraptions always fascinated us kids.

Meanwhile, Mom was inside busting out three different salads and getting all the toppings for the burgers and dawgs together. Us kids would pop in every now and again saying “Dad needs this!” or “Is this salad done?”

Now, that we grill every Friday, I make like one side. That’s it. I know the consequences and repercussions of letting each member of the family pick a side. No way. Oh you don’t like fries? Too bad. Hahahaha good joke, right? My kids could live off fries alone. As could most children.


I have also taken over the grill since I am a Type-A control freak. Sorry Mike, you don’t get the Douggie Fresh (that’s my Dad) grilling glory. You don’t get the kids running to and fro getting plates and drinks for you.

Unfortunately, this recipe for grilled beer brats is so that I am ultimately the one getting my own plates and beers. You literally put a foil pan on the grill and fill it with beers, brats, and one sliced onion. Close the grill lid and let them boil and bubble away for like 30-40 minutes.

The only hands on part is taking the brats out at the last minute to get a quick char on them, because grill marks are the whole reason for grilling, right?

The best easy Grilled Beer Brats

I really can’t take the credit for this easy cooking method. It is a staple in Mike’s family. Every birthday party, backyard BBQ, this is how they do brats. I don’t blame them! I applaud them. It’s basically a main meat with a side of caramelized onions.

You could just do this one thing and not have to face the trials and tribulations of the person stuck inside making all the sides.

Grilled Beer Brats

Yield: 6-8 Brats
Prep Time: 5 minutes
Cook Time: 35 minutes
Total Time: 40 minutes

This is the easiest way to make grilled beer brats. A foil pan on the grill filled with beer, a sliced onion, and your favorite brat/sausage. Not only do you get juicy brats, you get caramelized onions to boot!

Ingredients

  • 6-8 Brats
  • 1 yellow onion, thinly sliced
  • 2, 12oz light colored lagers
  • pinch of salt and pepper
  • 6-8 brat/brioche buns

Instructions

  1. Preheat the grill to high direct heat for at least 7 minutes with the lid closed.
  2. Add the foil pan to the grill. Add the onions, brats, beers, salt and pepper. Stir to combine.
  3. Close lid and cook over high heat for 30 minutes.
  4. After 30 minutes, remove the brats and transfer them to the hot grill for a quick char, about 2 minutes a side. Place them back in the beer and onions and then serve.
  5. Serve with sauerkraut, grainy mustard, giardinera, or any of your favorite toppings.

Notes

Feel free to use gluten free beer or even a darker beer works well in this recipe.

Be very careful removing the pan from the grill! It's best to have a baking sheet you can just slide the pan on to and serve it that way.
