Kimchi and Cheddar Frittata

Kimchi and cheddar frittata is easy to whip together with only 5 ingredients. Eggs baked with sharp cheddar cheese and chopped spicy Napa cabbage kimchi. Top with some chopped green onions and feed a crowd.

Let’s talk cookbooks real quick. Aside from my own two Instant Pot cookbooks, I cannot get enough of two books right now. The first is Serena‘s Dude Diet Dinnertime. I loved her first book The Dude Diet, so obviously I knew I was going to love this book as well.

If you need a book with lots of approachable dinners, this is the book for you. It would also make an excellent present for the cook in your life.

The second book is Nothing Fancy from Alison Roman. It is a great guide for holiday cooking and entertaining. Her first book, Dining In, is still one of my favorites. She loves citrus, capers, and anchovies.

In fact, this recipe is from her first book. Well, the recipe in her book is for an omelette. I switched it up to make it into an frittata just in case you are having a holiday brunch and need an easy recipe.

Kimchi and cheddar frittata starts on the stove and finishes in the oven. It is spicy and fluffy. You only need eggs, heavy cream, kimchi, salt, pepper, sharp cheddar, and green onions to make this dish. Five ingredients if you don’t count salt and pepper.

Frittatas cook in about 20 minutes. That fact makes this recipe easy to throw together in a pinch.

The majority of the time the frittata is in the oven. That leaves you to toast bread, talk to guests at brunch, or down mimosas.

I say go with the mimosa option.

Kimchi and Cheddar Frittata

Yield: Serves 4-6
Prep Time: 5 minutes
Cook Time: 17 minutes

A fluffy and spicy easy frittata made with cheddar cheese and kimchi.

Ingredients

  • 1 tbsp avocado oil
  • 10 large eggs
  • 3 tbsp heavy cream
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1 cup chopped kimchi
  • 4 green onion, chopped
  • 8 oz Sharp Cheddar Cheese, grated

Instructions

  1. Preheat the oven to 425 degrees F. Use a well-seasoned cast iron skillet or an oven-proof skillet.
  2. Add the eggs, cream, salt, and pepper to a medium/large mixing bowl. Use a whisk or fork to beat the eggs.
  3. Mix in the cheddar cheese and 1/2 the green onions to the egg mixture.
  4. Heat the skillet over a medium flame for a minute. add the oil and heat through for another minute.
  5. Add the kimchi to the pan and sauté for 2 minutes.
  6. Pour the egg mixture into the hot pan. Gently push the eggs back and forth for 2 minutes. Once the edges turn pale and begin to set, carefully transfer the skillet to the oven.
  7. Bake the frittata for 12-15 minutes until the center is ever so slightly jiggly.
  8. Top with remaining green onions. Wait 5-7 minutes for the frittata to set up before slicing and serving.
