These brownies beat out my pot roast recipe by a landslide.

These brownies are so, so easy to make. They require 8 ingredients. The brownies alone are even a stellar basic brownie recipe.

Peppermint Schnapps spiked chocolate glaze or frosting is what takes these brownies to the next level. The crushed candy canes on top are super festive.

Cut these brownies up and deliver to friends, neighbors, and co-workers.

Candy cane marshmallow brownies are an oldie but goodie recipe that doesn’t involve booze, if that’s more your speed.

This year Jack requested brownies for his birthday. A big pile of brownies to be more specific.

I was hoping Jack would be ok with the leftover homemade sprinkle cake from Andy’s birthday. Their birthdays are 5 days apart. Cake and brownies at my disposal is a dangerous situation.

Alas, Jack requested the brownies.

I consulted one of my favorite cookbooks from Molly Yeh.

Her sprinkle cake and mini hamburger cakes are my go to birthday party recipes. Every recipe Molly creates is always easy and fun to bake.

If you are making this recipe for kids or do not want to include the Schnapps, try substituting a little extra vanilla or honey or milk in the glaze recipe instead.

Peppermint Schnapps Brownies

Eight ingredient chewy brownies topped with a peppermint schnapps glaze and crushed candy canes.

Ingredients

  • FOR THE BROWNIES:
  • 1/2 cup flour
  • 1 cup sugar
  • 1/3 cup unsweetened cocoa powder
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1/2 cup unsalted butter, melted but not hot
  • 2 large eggs
  • 1 tsp vanilla extract
  • FOR THE GLAZE:
  • 1 cup powdered sugar
  • 3 tbsp unsalted butter, melted
  • 3 tbsp unsweetened cocoa powder
  • 1 tbsp peppermint schnapps
  • 1 tbsp honey
  • 1 tsp vanilla extract
  • crushed peppermint candy canes for the topping (optional)

Instructions

  1. To make the brownies, preheat the oven to 350 degrees F. Grease a 8 x 8-inch baking dish and line with parchment paper to allow one inch of overhang of paper on two sides.
  2. In a large bowl, whisk together the flour sugar, cocoa powder, salt, and baking powder.
  3. In a medium mixing bowl, whisk together the eggs, butter, and vanilla extract.
  4. Pour the wet ingredients into the dry and mix using a rubber spatula to combine.
  5. Transfer the batter to the prepared dish. Bake for 25 minutes until a toothpick inserted into the center comes out clean. Allow the brownies to cool for at least 10 minutes on a wire rack before glazing.
  6. To make the glaze, whisk all the ingredients together in a small mixing bowl.
  7. Spread the glaze over the brownies. Top with 2-3 crushed peppermint candy canes if you are using them.
  8. When the brownies are completely cooled, cut into 1 x 2 inch rectangles.
