We have a few last minute changes to our holiday plans.

Some that will require me to whip together either some cookies or an appetizer.

I feel that this is the norm for this time of year.

So, I thought I would share the EASIEST holiday or party appetizer to throw together in a pinch.

Here is what you need to make sun-dried tomato marinated mozzarella:

  • fresh mozzarella pearls
  • sun-dried tomatoes in olive oil
  • salt and pepper
  • fresh basil
  • balsamic glaze
  • toasted baguette

It is red, white, and green which is perfect for the holidays.

Here is how we make it.

The day before your party or gathering, drain the mozzarella.

Add the mozzarella pearls to a bowl.

Pour the sun-dried tomato olive oil from that jar right into the bowl with the mozzarella.

Dice up the marinated sun-dried tomatoes. Add them to the bowl.

Season the cheese and tomatoes with salt and pepper.

Store sealed with a lid in the fridge until ready to serve.

The day you are serving the cheese, give everything a good mix.

Top the mozzarella with a drizzle of balsamic glaze and a pinch of fresh basil leaves.

You can either buy the pre-toasted bread slices in the cracker section or you can slice and toast a baguette yourself.

Spoon the sun-dried tomato marinated mozzarella over the toasted bread.

Sun-Dried Tomato Marinated Mozzarella

Yield: Serves 4-6
Prep Time: 10 minutes
Total Time: 10 minutes

Fresh Mozzarella pearls marinated in olive oil and diced sun-dried tomatoes. Top with basil and balsamic glaze before serving.

Ingredients

  • 7oz jar sun-dried tomatoes in olive oil
  • 8oz fresh mozzarella pearls
  • big pinch of sea salt
  • fresh cracked black pepper
  • 1 tsp balsamic glaze
  • fresh chopped basil

Instructions

  1. Drain the fresh mozzarella pearls. Add them to a small mixing bowl.
  2. Pour the oil from the sun-dried tomatoes right into the bowl with the cheese. Dice the sun-dried tomatoes. Add them to the bowl. Season with salt and pepper. Mix to combine. Cover the bowl with plastic wrap. Refrigerate overnight or until ready to serve.
  3. When you are ready to serve, remove from the fridge, remove the plastic wrap. Give everything a good mix. Top with a generous drizzle of the balsamic glaze a little more salt and pepper and then the fresh basil.
  4. To make the baguette crisps, slice a baguette width-wise into 1/4 inch slices. Preheat the oven to 350 degrees F. Add the slices to a large baking sheet. Spray olive oil on both sides or lightly drizzle olive oil over the slices. Bake for 7-10 minutes, flip and bake for 5-7 more minutes until dried out and golden.
  5. Serve the baguette toasts alongside the marinated cheese. You can also serve with a little extra balsamic glaze on the side for when people make their own toasts.
