One Pot Mushroom Pizza Orzo

One pot mushroom pizza orzo is made from baby bella mushrooms, canned tomatoes, orzo, and fresh mozzarella. Tastes like a mushroom loaded cheesy pizza, but is all made in one pot in under 30 minutes.

I could eat pizza every single day of the week.

My body and face would be super mad at me though, so I don’t.

This dish came together because I really wanted deep dish pizza, specifically from the BEST: Lou Malnati’s. I will eat all deep dishes from Chicago; however, if I had to choose my fave, it’s this one.

Anywho, Lou’s wasn’t an option so I turned to my trusty, sorta-well-stocked pantry.

I found a little under half a box of orzo, a can of whole tomatoes, some balsamic vinegar, an onion, and some garlic. 

Almost cooking!

I found some fresh mozzarella and baby bella mushrooms in the fridge.

I was inspired by the queen of orzo, my friend Jenn from Peas & Crayons. She has so many great orzo recipes.

My favorite orzo recipe is for this creamy chicken and orzo soup. In case you were curious.

This recipe caramelizes the mushrooms first. I take the mushrooms out so they don’t get too soggy and add them back in at the end.

Then we deglaze the pan with onions, garlic, and some balsamic vinegar. Add the tomatoes and water in. Season it well and then let the orzo simmer away.

Add the mushrooms and cheese then broil to melt.

It is super easy and so delicious!

One pot mushroom pizza orzo will remind you so much of pizza. You’ll keep going back for another scoop and another scoop.

Next thing you know, the whole pizza (I mean pot) will be devoured.

One Pot Mushroom Pizza Orzo

One pot of orzo pasta cooked alongside canned tomatoes, garlic, mushrooms, and onion. It tastes just like a loaded mushroom and cheese pizza!

Ingredients

  • 2 tbsp extra-virgin olive oil
  • 10oz baby bella mushrooms, sliced in half or cut into fourths
  • 1/2 yellow onion, diced
  • 2 garlic cloves, minced or grated
  • 1 tbsp balsamic vinegar
  • 1, 28oz can whole peeled tomatoes
  • 14 oz water
  • 1 tsp salt
  • 1/4 tsp crushed red pepper flakes
  • 1/2 tsp dried oregano
  • 3/4 cup orzo
  • 4oz fresh mozzarella, sliced or ripped
  • fresh parsley for garnish

Instructions

  1. Add the olive oil to a large oven-safe skillet. Heat the oil over medium.
  2. Once the oil is shimmering, add the mushrooms and cook for 7-10 minutes until caramelized on all sides. Remove the mushrooms and set off to the side.
  3. Reduce the heat to medium/low. Add the onion. Cook for 2 minutes. Add the garlic and the balsamic. Mix to combine and scrape up and caramelized bits from the bottom of the pan.
  4. Mix in the tomatoes and water. Use the side of a wooden spoon to break apart the tomatoes into smaller pieces. Mix in the salt, crushed red pepper, oregano, and orzo.
  5. Bring to a simmer. Simmer orzo uncovered for 7-9 minutes, stirring occasionally to ensure the pasta doesn't stick to the bottom.
  6. Once the orzo is al dente, add the mushrooms to the top along with the cheese.
  7. Turn your broiler to high. Place the skillet under the broiler for a few minutes until the cheese is melted.
  8. Top with chopped fresh parsley and more crushed red pepper flakes.
