The last thing I want while coordinating zoom calls and keeping the kids from streaking through the background of Mike’s zoom teaching, is a lot of fuss at dinnertime.
That is why I put together the ultimate (ish) list of one pot or one pan meals for busy nights.
Since everybody is still in the home for the most part, you don’t really get time to yourself in the kitchen to bust out a complicated recipe like Beouf Bourguignon.
Not that I crave a dish that warm and toasty during August, but, just saying.
While I make dinner, I usually keep an eye on the kids, let the dogs out, or finish up laundry.
Mom’s we get the job done!
I love a meal all in one cast iron skillet or all on one sheet-pan.
The list I complied for you is full of one pot pastas, sheet-pan chicken, and quinoa bakes. I tried to keep the cook time and prep times under an hour.
Nobody has time for that given regular circumstances let alone during pandemic living.
